Traditional Bleu d'Auvergne cheese comes from the South of France. It has a strong aroma that is mostly revealed with dessert or robust red wines.
Bleu d'Auvergne cheese is made from cow's pasteurized or raw milk that makes it creamy and buttery. It is protected by AOC status. Bleu d'Auvergne is aged for at least 4 weeks before showing its typical bluish-green veins. By this time, the cheese matures to showcase its specific flavor and texture.
The cheese is often used in salad dressings, pasta and also is a good cheese for snacking.
