This palatable goat cheese is a fresh soft cheese dusted in ash. it comes coated with vegetable ash and it is made in dairies. It has a creamy and smooth texture with a light sweetness and a fresh, citrus taste.

What makes it recognizable is its pyramid shape. When the emperor returned to Valençay after his unsuccessful expedition in Egypt, he saw the pyramid cheese, and, in a fit of rage drew his sword and cut off the top. Since then the cheese has always been shaped with a flattened top.
