Bleu d’Auvergne cheese is made from cow’s pasteurized or raw milk that makes it creamy and buttery. It is protected by AOC status. Bleu d’Auvergne is aged for at least 4 weeks before showing its typical bluish-green veins. By this time, the cheese matures to showcase its specific flavor and texture.
The cheese is often used in salad dressings, pasta and also is a good cheese for snacking.
