Bucherondin is a mild, French goat cheese made by Sevre et Belle, a large, century-old dairy cooperative in the Poitou-Charentes region. This is an area of western France that also produces Sainte-Maure de Touraine and Chabichou de Poitou.
Bucherondin is made with pasteurized milk and has the shape of a log – ‘buche’ is French for log and ‘bucheron’ means a woodcutter or lumberjack. Bucherondin has a wrinkled bloomy rind that resembles the bark of a tree. This gourmet cheese is semi-soft, and has a dense, flaky paste and the flavor of Bucherondin is mild when young tht sharpens with age.
This cheese is excellent served with aperitifs or can be used for salads, marinating or simply chevre for the board.
