For three generations, we’ve been smoking our Scottish Smoked Salmon in exactly the same way.
We simply dry-salt it in the traditional manner. Then we smoke it over whole oak logs in our 50 year old brick kilns, for up to three times longer than commercial producers. It’s ready when it’s ready.
The result: delicate slices of smoky, fishy heaven.
