This delicious combination of pork meat and Espelette pepper is held together in a natural lamb casing. The ground pork in each sausage is infused with AOC Piment d'Espelette or Espelette Powder, a chili pepper powder considered the cornerstone of Basque cooking. While this pepper has a fiery-red color that it imparts to the sausage, it is actually mild in spiciness, offering just enough heat to enliven the senses without fully incinerating them!
